Gourmet Dinner Waffles

Yield: 4 Servings (8 waffles)

Waffles
250 g (1/2 lb) all-purpose flour
30 ml (2 tbsp.) maple sugar, grated
30 ml (2 tbsp.) baking powder
5 ml (1 tsp.) fine salt
30 ml (2 tbsp.) melted butter
375 ml (1 1/2 cup) buttermilk
2 eggs
3 egg whites, whipped into peaks
55 g (2 oz.) strong cheddar cheese (such as that of Île aux Grues), grated
55 g (2 oz.) prosciutto, in thin strips

Topping

pears of choice, peeled, deseeded and quartered
30 ml (2 tbsp.) butter
1 sprig of rosemary
180 ml (3/4 cup) light maple syrup

In a bowl, mix flour, maple sugar, baking powder and salt. Set this mixture aside. In another bowl, mix melted butter, buttermilk and eggs. Gradually add the second mixture to the first, then add the egg whites, cheddar cheese and prosciutto strips. Cook in a waffle maker.

Sauté pears in butter and add rosemary. At the end, add maple syrup. Do not overcook to maintain crispiness. Pour topping over waffles.

Chef’s Tip
Do not over stir waffle mixture to maintain consistency of egg whites. Waffles are best eaten fresh, but can be frozen if desired.
